King Arthur Gluten Free Bread: mixing the dough is so much fun. It almost looks like a sweet cream frosting! Yummy with goat butter from City Market. Also the King Arthur bread pan, used with or without lid, truly makes the perfect bread.
HEARTY POTATO, SPINACH, GARLIC SCAPE SOUP a la Susan.
Fun to make.
6 cups vegetable broth
4 large potoatoes
15 or more garlic scapes
1 bag of spinach
olive oil
salt & pepper
chop garlic scapes (or could do leeks or onions too) and saute in olive oil in soup pot. Add spinach and sautee breifly, then slice potatoes and add enough vegetable broth to cover the potatoes and cook until they are soft then add rest of veggie broth and simmer for half hour or so then mix in blender or food processor until smooth (1 batch at a time). You can chill or serve warm and can add unsweetened hemp milk for a creamier taste. Season with salt and or pepper or any seasoning you like – it’s a mild soup so any spices work.
